Birthday Cupcakes for Preschool

Allison’s preschool is celebrating her birthday at school tomorrow.  (There is no school next week because of Fall Break.)  This afternoon Allison and I made 2 dozen cupcakes!  We also put together 22 little goodie bags for her classmates!  I feel like a real Mom now that I am baking cupcakes for school!  We had to go to Walmart this morning to buy a container to carry them in!

Here is the milk, egg, and soy free recipe I use for Allison’s cupcakes.  The recipe is from my Food Allergy and Anaphalaxis Network cookbook.  It makes great, moist cupcakes!

    How exciting! I hope you have a super birthday at preschool today,Allison! My favorite cupcakes! What are the little candies on them? Have never seen those.

    The decorations are plastic smiley face rings. A long time ago (in a land far, far, away) I had professionally made cupcakes that used plastic rings for decorations and I thought it was such a great idea that I stored it in the back of my mind for years and years until I had the perfect opportunity to try it out.

    Carter had a cupcake this morning and was totally perplexed by the ring. When it came out of the cupcake he said, “Broke.” Well, hopefully it will go over better with Allison’s preschool friends!
